En Gironde, un restaurant fait le pari d’abandonner son étoile Michelin
A Langon, au sud de Bordeaux, le restaurant de la Maison Claude Darroze affiche complet. Cette référence de la gastronomie girondine a pris le pari de poursuivre l’aventure sans son étoile Michelin, afin de, paradoxalement, “mieux s’en sortir” financièrement. “J’ai écrit (au Guide Michelin) pour expliquer qu’on changeait de concept, qu’on allait s’orienter vers une cuisine plus traditionnelle, plus familiale”, raconte à l’AFP JeanCharles Darroze, 44 ans, héritier de plusieurs générations de cuisiniers.

In Gironde, a restaurant is betting on giving up its Michelin star
In Langon, south of Bordeaux, the restaurant of the Claude Darroze House is fully booked. This reference in Gironde gastronomy has taken the gamble of continuing the adventure without its Michelin star, in order, paradoxically, to “get by better” financially. “I wrote (to the Michelin Guide) to explain that we were changing our concept, that we were going to move towards a more traditional, more family cuisine,” JeanCharles Darroze, 44, heir to several generations of cooks, tells AFP.
